Baked, Crispy, Buffalo Chicken Bites

Buffalo Chicken Bites

These crispy, buffalo chicken bites are a perfect game day snack that you can feel a little less guilty about because they aren't fried, they are baked! My family loves spicy but you can adjust the amount of buffalo sauce you use according to your taste!

2 rotisserie chicken breasts, shredded
4 oz. cream cheese, room temperature
1/4 cup sharp cheddar, shredded
1/2 cup Frank's Original Buffalo Sauce
1/3 cup green onion (scallions), chopped
1/2 to 1 cup flour
2 eggs, beaten
1 cup Panko bread crumbs
1/4 cup unsalted butter, melted

  1. Combine chicken, cheeses, sauce, and green onion well.
  2. Roll mixture into 1 inch balls.
  3. Roll balls in flour, then egg, then Panko and place on baking sheet.
  4. Drizzle or lightly brush the melted butter onto the bites.
  5. Bake at 350° for 20-25 minutes until golden.
Tips & Tricks
  • Use your favorite cheese in place of the cheddar cheese. I think pepper jack would be great!
  • Use any leftover chicken you have in the house!
  • I tend to start with less breading ingredients because when I follow recipes I ALWAYS end up with waste. I rather start with less flour, 1 egg, and 1/2 cup of Panko and add more when necessary versus having to throw out extra. 
  • I used melted butter only to get the golden brown color if you don't mind a lighter color (Panko has a light color) then you can omit the butter. Remember, all you're really cooking is the egg and melting the cheeses.
  • Serve with your favorite ranch or blue cheese dip!
